Mark Gilchrist Game Fair Recipe: Thai Green Pheasant Curry with Fragrant Rice
With the game shooting season well-under way, this week's recipe of Thai Green Pheasant Curry offers the perfect antidote for those cool wintery evenings, whilst utilising a beautiful game meat that exudes plenty of stunning flavours.
Mark Gilchrist, Countryman Fairs' resident chef and Director of Game for Everything, guides you through cooking a fragrant Thai curry under 25 minutes. Perfect for this coming Valentine's weekend, Mark's recipe is quick and easy to prepare without compromising on taste. Enjoy!
Ingredients
Serves: 2
Cooking Time: 25mins
- 1 bunch of spring onions
- Ginger
- Chillies to taste
- A knob of butter
- 1 bunch of coriander
- 3 cloves of garlic
- 1 piece of lemon grass with the skin and top removed
- 1 teaspoon of shrimp paste (optional)
- 2 pheasant breasts, diced
- Onion
- One can of coconut milk
- Rice - normal, wild or a combination
Method
- In a food processor, blitz the spring onions, ginger, coriander, garlic, lemon grass, chillies and shrimp paste.
- In a pan, fry two tablespoons of the above mixture in oil on a relatively high heat, then add half a diced onion and the diced pheasant breast. Thighs would also work well with this recipe.
- Get the rice on. I tend not to wash it so that it goes a bit sticky, which is how Thai rice should be. Use equal parts of rice to water, bring to the boil, put a lid on the pan and simmer until all the water is absorbed (normally around 10mins).
- Pour the coconut milk into the curry and cook for 5mins. Season to taste.
- Plate it up nicely and enjoy!
